
Hey y’all!! How’s the weather around you looking like now? I’m so happy it’s been a lot warmer here in my town. It’s about damn time too! I got another delicious recipe for you so let’s get right into it.
This is my mushroom spinach ravioli dish, I definitely buy the pre-made ravioli from the store and it makes my life that much easier. Cooking at home almost every night is a lot of work, so the more time you can save by purchasing some ready-made ingredients will thank you later! I mean all my home-chefs know that cooking requires a lot of energy, you better believe it. With everything we got going on these days, some help can go a long way.

Ingredients: Pre-made ravioli, veggie stock, mushrooms, heavy whipping cream, garlic, fresh spinach and olive oil.

Step One: Bring a pot of water to boil and season with salt. While the water is boiling, mince the garlic and chop the mushrooms.

Step Two: Give the spinach a little haircut by cutting off the stems. Leave as much of the leaves as possible. Then rinse off the spinach in a separate bowl of water. Dunk them in and shake off any sand/dirt. Do this part twice to be thorough.

Step Three: Drop in both bags of ravioli and cook as instructed. About 8-10 minutes will do.

Step Four: Cook the spinach in a non-stick skillet with a drizzle of olive oil. Cook for about 5-8 minutes on medium low heat. Season with salt and pepper. Do the same process for the mushrooms but separately.

Step Five: In the same skillet, once you remove the veggies and set them aside, cook the minced garlic until browned. Then add in the heavy cream and veggie stock. Bring to a gentle simmer and add in the salt, pepper, cayenne. Continue cooking for 8-10 minutes on low heat.

Step Six: Add the cooked veggies back in the skillet to reheat. Stir together gently.

And there you have it! Another recipe for the books, delicious, fairly simple and takes about 30 minutes. This one I would use to entertain guests and have company over for sure. For the protein, a good pairing would be steak or salmon. If you use two packages of pre-made ravioli, you can have enough for left-overs the next day! - 4 cloves Garlic
- 1/2 cup Heavy Whipping Cream
- 1/4 cup Veggie Stock
- 1 package Mushrooms
- 1 bundle of Fresh Spinach
- Salt, Pepper
- 1/2 TBSP Cayenne
- Parmesan (Optional)
