Roasted Butternut Squash Pasta w/ Spinach & Sausage

Here’s another recipe for y’all to enjoy. This dish was perfect entryway to the Fall season here in NYC. I am so excited to usher in this season with different recipes, activities and projects.

Ingredients: Butternut Squash (or the squash that’s available in your supermarket), sausage, frozen spinach, pasta, parmesan, garlic, olive oil, heavy cream and seasonings.

Step One: Preheat the oven to 400F. Prep the squash into chunks like so and distribute into a baking tray. Drizzle with olive oil and salt. Bake for 20 mins. In a separate pot, boil the water necessary for cooking the pasta. Follow the box instructions to cook pasta.

Step Two: Once the squash is cooked, or if you have a second tray, add the sausage links side by side. Cook for 10 mins or until the internal temp reads 160F.

Step Three: Defrost the frozen spinach and dice up the garlic like so.

Step Four: In a skillet, heat on medium, add olive oil and spinach. Cook for about 2-3mins then add the diced garlic. Cook for another 3-4 mins while stirring. Season with salt and pepper.

Step Five: My favorite part! Grate the parm cheese into beautiful shreds.

Step Six: Turn down the heat to medium – low then pour in the heavy cream. Be sure to stir gently and let it come up to a boil. Once boiling turn down heat completely to low and keep stirring for about 3-5 mins. Don’t forget to add seasoning! Combine the mixture with the drained pasta. Dice up the cooked sausage once they finish. Add in the baked squash to the pasta.

  • 1/2 Butternut Squash (chunks)
  • 2 packs of sausage
  • 2 garlic cloves (diced)
  • 1/3 cup frozen spinach (thawed)
  • 1 cup heavy cream
  • 1/3 cup Parmesan Cheese (grated)
  • 1 box Pasta Shells
  • Salt & Pepper
  • 2 – 3 TBSP Paprika
  • 1 TBSP White Pepper
