
Look at this delicious, healthy and nutritious butter bean recipe!! I really enjoy making beans with different veggies and this time I used spinach. It’s a great combo to pair with any meat of your choice. I did use salmon for myself but you are free to choose what you like. What are butter beans? They are much larger than most beans you’ve probably eaten and originate from South America. Butter beans as the name implies are very creamy and are also packed with protein. They can be used in a variety of dishes ranging from soups, stews, dips, salads and more!

Ingredients: Butter beans (canned), onion, lemon, garlic, cream cheese, spinach and olive oil. Plus your preferred meat for this dish. I also paired my butter bean recipe with white rice.

Step one: In a heavy bottom pot, drizzle about 2 teaspoons of olive oil and let it heat up. Once hot, slide in the chopped onions. Cook for 3 mins on medium heat. Then add the garlic for another 1 – 2 mins.

Step two: Without draining the beans, pour both cans into the pot. You want the liquid from the cans to make this dish! Now simmer for about 5 – 6 minutes still on medium heat. The liquid will naturally be reduced as it cooks.

Step three: Add in the cream cheese, lemon juice and the lemon zest. Please do not forget the lemon zest as it adds that extra punch. Stir everything together and cook for 3-4 mins now on medium-low heat.

Step four: Add in the thawed spinach. Stir gently until combined. Add in the seasonings and give it another stir. Cook with the lid on the pot for about 5 minutes.

- 3 – 4 cloves garlic (chopped finely)
- 1 medium white onion (chopped)
- 2 TSP Olive Oil
- 1/2 bag frozen spinach or about 3 cups (thawed for about 5 mins)
- 2 – 3 TBS lemon juice
- Zest of 1 lemon
- 2 (15oz) cans of Butter Beans
- 1/2 TSP Paprika
- Salt & Pepper
