White Bean Chili & Chicken

Happy Weekend dear readers! I have a dee-licious recipe for y’all today. I enjoyed making it as much as I did eating it. And I know you will too! Let’s get started with the ingredients.

Ingredients: Vegetable broth, olive oil, white kidney beans, corn. celery, onions, green pepper, garlic, jalapeno, flour, cashews, and seasonings will be listed at the end. *I did use chicken however you can choose whichever protein source you like.*

Step One: In a heavy bottom non-stick pot, turn heat to medium low. Add the olive oil and let it heat up. Then place the chopped onions & green pepper first to cook for about 3-4 mins. Followed up by the chopped garlic for another 3 mins. Lastly add in the chopped jalapeno to cook for 2 mins. Sprinkle some salt and stir until golden brown.

Step Two: Add the seasonings plus the flour and stir to combine well. Cook for about 2 -3 mins on low.

Step Three: Go ahead and add in the white beans and corn, cook for 12-15 mins. Turn the heat back up to about medium.

Step Four: To make the cashew slurry, you’ll need a small blender. I used my Vitamix blender which I love! Add in the cashews and some hot water. Blend until it’s a nice smooth slurry and no chunky bits remain. Pour in the slurry into the white bean mixture and cook about 8-10 mins. I added the celery last just to help it keep some of it’s texture for a nice crunch. You can turn the heat up a bit more at this point if you like.

And there you have it! A delicious and healthy white bean chili! Now I did add chicken in mine, you can add whichever meat selection you prefer. Sausage would be a great option for protein in this recipe as well. Have fun with this recipe!!

  • 1 cup Veggie Stock
  • 1 medium Onion (chopped)
  • 1 jalapeno (chopped)
  • 2 cans White Kidney Beans (drained)
  • 1 Celery Stalk (chopped)
  • 1 Green bell Pepper (chopped)
  • 2-3 Garlic cloves (chopped)
  • 2 TBSP Flour
  • 1/2 cup corn (frozen or fresh)
  • 1 handful of cashews
  • 3/4 cup hot water
  • 1/2 TSP Cumin
  • 1/2 TSP Salt
  • 1 pinch of Pepper
  • 1 TSP Chili Powder
  • 1/2 TSP White pepper
  • 1/2 TSP Paprika
  • 1/2 TSP white sugar
