
Goodmorning everyone! I hope your day has started off well. It’s another new week as we make our way through the remainder of April. I just came back from the park and am feeling good! I wanted to share this delicious recipe with y’all. Of course, my partner and I had paired the recipe with a beautiful cut of salmon however you can select any protein source you prefer.

Ingredients: You will need a medium sized head of cauliflower, red onion, lime, garlic, chickpeas, walnuts, dates, red wine vinegar, maple syrup (not shown), cilantro (not shown) olive oil and seasonings listed at the bottom of the recipe.

Step One: Go ahead and rinse the cauliflower and drain the chickpeas. Cut the cauliflower into florets and turn the oven on to 400 degrees F. Sprinkle with olive oil and seasonings. Make sure the tray is also coated in olive oil. Place into oven for 20 mins.

Step Two: Thinly slice the red onion. I only used about 1/4 of a medium sized red onion. Chop up the garlic and dates into teeny tiny pieces. I do like the dates chopped slightly larger than the garlic for this recipe. Then roll up a handful of the cilantro and julienne it. Add in the squeezed lime juice, maple syrup, red wine vinegar, olive oil and a bit of salt. Mix it all together and set aside in the fridge.

Step Three: When the timer goes off, add the chopped walnuts into the tray, give it a good shake and place back into oven for 5 mins. Take the marinated onions out of the fridge after the 2nd timer goes off. Spread the marinade on top of the roasted cauliflower and chickpeas.

Then serve with your choice of protein. This paired so nicely with the salmon! I highly recommend. So there you have it, a fairly easy recipe for any day of the week or weekend. Enjoy!

- 1/4 medium red onion (sliced thin)
- 2-3 cloves garlic (chopped)
- 1 TBSP red wine vinegar
- 1-2 TBSP maple syrup
- 1-2 limes (squeezed)
- 1/4 cup cilantro (julienne)
- 1/4 cup walnuts (chopped)
- 1/4 cup dates (chopped)
- 1-2 TBSP olive oil
- 1 TSP onion powder
- 1 TSP paprika
- 1 TSP coriander
- Salt
