
Hello hello dear readers, welcome back to the blog! I hope you are all doing well and enjoying yourselves. I have been a bit busy but my blog has been calling me back for some inspiration. Today I wanted to share this recipe because it’s so healthy and it keeps me going! Being a fitness guru, I have to advocate for inspiring healthy dishes, not just the normal old school recipes that your mom probably made. Let’s get into it!

Ingredients: Eggplant, zucchini, kale, tomatoes, onion, ground turkey, pasta, ricotta, parmesan, tomato sauce, olive oil and seasonings which I will include at the very bottom.

Step One: Bring a pot of water to a boil. Then add the pasta and season with salt. Cook just about 2-3 mins short of the box’s instructed time. Once cooked, drain and set aside. Now is the time to also pre-heat the oven to 400 F.

Step Two: In a skillet, drizzle some olive oil on medium heat. Once pan is hot enough, add the chopped onion. Cook for about 3 mins and stir gently. Sprinkle some salt.

Step Three: Add the chopped eggplant and zucchini to the baking tray. Drizzle some olive oil to prevent sticking and season with salt & pepper. Place into oven for about 15-20 mins.

Step Four: Back to the skillet on the stove, with your spatula push the onions off to one side and add in the ground turkey. Gently break apart the meat with the spatula and let it cook until browned evenly. Then stir onions and meat together. Add a lil bit more salt, pepper, paprika, dried thyme and Italian seasoning. Cook for about 8 mins and then pour in the tomato sauce. Cook for another 3-4 mins then pour the meat sauce into the large pot of drained pasta. Combine well.

Step Five: Back to the oven… add the chopped kale and cook for 2-3 mins until it’s wilted and a little crispy. Then add the chopped tomatoes and cook for 3-4 mins.

And now you’re ready to fix up a plate for yourself and your loved ones. It’s a meal that will last for a few days! I love left-overs, everything tastes better when it’s the next day. Top off the pasta with a scoop of ricotta and sprinkle a lil parmesan! Enjoy!!
