
Hey what’s going on readers! Happy Sunday! I hope you are all enjoying the weekend. I got another recipe for y’all and this one is for my vegans. If you have a hard time eating meats, do try this recipe and let me know in the comments how it went. Would love to hear from you.

Ingredients: Sweet potatoes, red onion, tofu, veggie stock, olive oil, broccoli, scallions, red bell pepper, zucchini, garlic, soy sauce and seasonings (listed at the end of the recipe) NOTE: I did not end up using the frozen mixed veggies.

Step one: Once you wash the sweet potatoes, chop them into bite sized chunks. Pre-heat the oven to 400 – 420 degrees F. Place sweet potatoes into a sheet pan and drizzle with olive oil, salt and pepper. Cook for about 10 minutes. Remove from oven when finished and set aside.

Step two: Turn on the heat to medium and drizzle olive oil in the pan. When it’s hot, you slide the onions into the pan. Sweat them for 3 minutes on medium-low heat and sprinkle some salt. At about 1.5 minutes left on the clock, add the chopped garlic. You’ll want to keep stirring pretty often.

Step three: Add the remaining chopped veggies (broccoli last*) and add a little extra olive oil if need be. Cook for 10 minutes and stir frequently. Once timer is finished, add the seasonings and continue to stir. Cook for another 5 minutes. Add both the soy sauce and veggie stock at this point. Keep stirring! Then add the broccoli and cook for another 5-8 minutes. Remove everything from the pan when finished.

Step four: Add more olive oil to the pan and let it heat up. Once hot, go ahead and add the sliced tofu pieces. Be delicate with them when cooking because they will break apart easily. You’ll want to cook 3 minutes per side till they turn a nice golden-y color. When finished remove and set aside.

Step five: Finally cook the chopped scallions for 3 minutes. Then add everything together in a nice big serving bowl or let it cool down before placing into the fridge.

That’s all for this recipe! Pretty simple, nothing too complicated and with a bit of spices and flavor. I served mine with a bed of white rice, but you can choose whatever carb source you prefer. Happy cooking!!
