Roasted Chickpeas w/ Yogurt & Pita

What’s going on y’all, I hope you are all doing well this Monday. I have a quick recipe for ya which will be a great healthy snack. Since I wake up very early to train some of my clients, I have to make sure to eat in some good grub in my belly. What I’ve noticed is that my body doesn’t want to take in food so F’ing early in the morning. So I prep my food for that morning and then after I train my earliest client (5:30am), I can eat my first meal. My body will take it in after a certain time. This was a good meal to which I added one boiled egg (not shown above).

Ingredients you will need are, chickpeas, yogurt, pita bread, tomato, onion, cucumber, garlic, lemon, olive oil, paprika, turmeric, Italian seasoning, salt, pepper and some chole masala.

Step one: Prep the garlic, onion, tomato and cucumber. Give it all a good chop!

Step two: Drop in the onion into a hot skillet with some olive oil. Cook & stir for 3 minutes. Sprinkle some salt. Afterwards add the garlic and stir. Cook about 2 more minutes.

Step three: Add the drained chickpeas and seasonings. Cook for 10 minutes on medium heat. You may want to lower the temp closer to the end so it doesn’t burn. Keep an eye on these badboys.

Step four: This is what color your chickpeas will look like once the timer is finished. Look at that lovely yellow golden color!! Thanks to the turmeric!

Voila! That’s all there is to it. Mix in the diced tomato and cucumber. Now you have yourself a nice & simple, meal/snack that’s nutritious! I served mine with a slice of toasted pita and yogurt sprinkled with a dash of paprika and a wedge of lemon. Lemon makes everything fresh! Enjoy and happy cooking!

Ingredients:

  • 1 can of chickpeas (drained)
  • 1 lemon (sliced into wedges)
  • 2-3 garlic cloves (finely diced)
  • 1 white onion (diced)
  • 1 tomato (diced)
  • 1 cup cucumber (diced)
  • Pita Bread
  • Plain Yogurt
  • 1 tsp Chole Masala
  • 1/2 tsp Italian seasoning
  • 1/4 tsp Turmeric
  • Sprinkle of paprika
  • Salt & Pepper
  • 1 Tbsp Olive oil
