The Perfect Eggless Cupcakes

This past weekend, I had a task to bake some cupcakes for a special function, but the only criteria was that they had to be eggless. I had no fear, I knew I could do it. I decided to make two types, chocolate and vanilla cupcakes. The chocolate one is shown above. I topped it with delicious dulce de leche frosting and gold sprinkles to match our pink & gold theme. The vanilla cupcakes were topped with a condensed milk frosting which I turned pink with some food coloring and lastly red sprinkles. I wish I had a close up photo of the vanilla ones. I did a rustic style frosting here with just a spoon. They were a hit! Fluffy, moist and they rose perfectly. Success!!
