
What’s up what’s up readers! Hope y’all had a fantastic holiday season! Wishing you all the best of this New Year 2023. I want to start off this year with a delicious and healthy recipe. Note: Some of the ingredients are missing from my photo but I listed down below*. I did not include the instructions for the salmon either, you can choose whatever meat/fish you like, totally up to you.

Ingredients: Spinach, quinoa, mushrooms, onion, garlic, parmesan cheese, white beans, Italian seasoning, vegetable masala, veggie broth and lemon.

Step one: Begin with boiling the quinoa as per instructions. I used 1 cup of quinoa with a little salt. Add more water if need be.

Step two: Prep the onions, garlic and mushrooms.

Step three: In a heavy bottom pot with olive oil on medium heat, sauté the onions first! Let it cook for about 3 mins. When 1 minute remains on the clock, add the garlic. Sprinkle a dash of salt. Of course do not forget to stir.

Step four: Add the mushrooms and cook for 3 minutes. Sprinkle a little more salt.

Step five: Add the whole bag of spinach and let it wilt. I like to put the lid on at this point to help the spinach wilt faster.

Step six: Now sprinkle more salt and add pepper. This is definitely one of my favorite parts, watching the spinach go down!

Step seven: You can add the cooked quinoa now to the heavy bottom pot. Pour in the first 1/2 cup of veggie broth. Add the Italian seasoning and the veggie masala. Stir everything well to combine.

Step eight: Add the white beans last along with the remaining 1/2 cup of veggie broth. Let it all get soaked up in this delicious goodness. Squeeze some fresh lemon juice. Give it a good stir and cook for about 10 minutes on low heat.

Right before serving, let it cool just a bit and then sprinkle a bit of parm cheese. There ya have it, my first recipe of the new year. Enjoy!! Happy cooking 😉

- 1 cup Quinoa
- 1 package Mushrooms (quartered)
- 2-3 tbsp Olive Oil
- 3-4 cloves Garlic (chopped)
- 1 medium White Onion (chopped)
- 10z bag of Spinach
- 1 can White Beans (drained)
- 1 cup Veggie Broth
- 1 tsp Italian Seasoning
- 1 tbsp Veggie Masala
- Salt / Pepper
- Parmesan Cheese
- Lemon Juice (freshly squeezed)
