
Today I made this recipe again and realized I never posted it from before! I was kind of craving this recipe because I’ve been feeling bloaty for a few days and also recently had trouble with eating certain meats. I’m feeling better now so I can have select meats that my body can tolerate. Heads up, I didn’t include instructions on cooking quinoa, you do the same as you would cook rice.

Ingredients: Sausages, white onion, apples, bell peppers, veggie stock (not shown), garlic, red wine vinegar, diced tomatoes and either flour or cornstarch.

Step one: Cook the sausages on each side for 5 minutes on medium heat. You can do this method by leaving them whole OR slice them raw in half and then cook each side for 4-5 minutes. If you leave them whole, you will need to slice them in half later to cook the inside… see further instructions & photos.

Step two: Prep the veggies which would be the bell peppers, onions and apples. Do this while the sausages cook.

Step three: If you did leave the sausages whole, then after the first 10 minutes of cooking them (5 mins on each side) now you slice them lengthwise and then you want to cook the insides for about 3-4 minutes. Remove them onto a plate and let them rest.




Step four: (Top left) First cook the sliced bell peppers in a large pot in about 2 tbsp of olive oil. Cook for 3-4 minutes.
Step five: (Top right) Add the garlic and cook for 2-3 minutes then add the apples. Cook for another 5 minutes. Then add the onions for 3-4 minutes. Stir every so often. This is a good time to season with salt and pepper.
Step six: (Bottom left) Add the can of diced tomatoes and stir.
Step seven: (Bottom right) Add the red wine vinegar, cornstarch slurry and veggie stock. Stir of course. Cook with the lid on the pot for about 15 minutes on low.

When everything is done, serve the apples on a bed of quinoa and on the side serve up the sausages. It’s healthy, hearty and good for you too! Enjoy!

- 16 Sausages
- 1 tbsp cornstarch or flour
- 1/2 cup of veggie stock
- 1 tbsp red vinegar
- 1 large can diced tomatoes
- 2 Apples
- 2 Yellow Bell Peppers
- Salt & pepper
