
Hi everyone! I’ve been M.I.A for a bit hehe but I’m back! It’s been nice to take a little break. I hope you all have been doing well and taking care of yourselves. This yummy recipe was sooo satisfying and healthy! I really love cooking spinach like this, give it a try!

The ingredients you will need are: olive oil, chicken tenders, cherry tomatoes, an onion, garlic, spinach, lemon juice, parmesan cheese, cannellini beans, red pepper flakes and of course salt pepper for seasoning.

Step one: Wash, season and cook your chicken tenders. I cooked mine on each side for about 3-4 minutes and then removed them into a container.

Step two: Prep your onion, cherry tomatoes and garlic. Slice the cherry tomatoes in half after giving them a rinse. Dice the onion and garlic.

Step three: In a large heavy bottom nonstick pan, on medium low heat, add the olive oil. Once it’s hot add the onion and sauté for 5 minutes while stirring often.

Step four: Add the garlic and cook for about 30 seconds while stirring.

Step five: After you drain the water from the beans, pour them into the pan. Add the red pepper flakes. Cook for 2 minutes and stir every so often.

Step six: At this point increase the heat to medium. Now add cherry tomatoes and spinach. Look at how much space the uncooked spinach takes up! The whole freakin pan! Have no fear, you’ll see the transformation on the next picture. Cook for about 2 minutes. Give it a stir, *carefully* so you don’t lose too much spinach if it falls out while stirring.

Step seven: Like magic our spinach has calmed the F down haha! Now you may add the lemon juice, it’s great if you have freshly squeezed, if not no worries. Also add the salt & pepper to taste.

Voila! A healthy and delicious dinner recipe that is perfectly cooked. The cherry tomatoes are still plump and will pop in your mouth once bitten, the spinach is lemony, the beans are soft yet still thick. Top off the dish with some parmesan cheese and you’re good to go! Enjoy!

- 3 teaspoons olive oil (1 tsp for chicken tenders & 2 tsp for veggies)

- 3-4 garlic cloves
- 1 (15oz) can of cannellini beans
- 1/4 tsp red pepper flakes
- 9 oz spinach
- 10-12 cherry tomatoes
- 3-4 tsp lemon juice
- Parmesan cheese
- Chicken tenders
- Salt & pepper
