Sweet Potato Turkey Chili

This delicious, healthy and hearty chili recipe is going to be a weeknight favorite that will leave you with plenty of leftovers! The sweet potato is the best part in my opinion and makes a HUGE difference.

The ingredients you will need are; ground turkey, sweet potato, corn, onion, can of diced tomatoes, canned kidney beans, olive oil, garlic & vegetable stock (forgot to include in photo) and of course seasonings. Make sure you thaw the corn if it’s frozen.

Step one: Prep your sweet potato and onions. I peeled off the skin on my sweet potatoes and gave them a good wash too. I like to cut the sweet potato into about an inch or less so it cooks properly otherwise it will take far too long.

Step two: Heat your heavy bottom pot to medium and add olive oil. Once hot, add the onions and sauté for about 3 mins. Then add the garlic and give it a stir so it doesn’t burn.

Step three: Push the onions off to the side and add the ground turkey. Break it apart and cook for 6-8 mins. Stir frequently.

Step four: Add the sweet potatoes and cook for 6 mins while stirring. Then you may add the seasonings, tomatoes, and vegetable stock. Now reduce heat to low and let it cook for 20-25 mins.

Step five: Lastly add the corn and beans, cook for another 5-8 mins. Serve and enjoy!! Thank me later.

  • 1 lb ground turkey
  • 2 sweet potatoes (cubed 1/2 inch)
  • 1 white onion
  • 1 tbsp minced garlic
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tbsp paprika
  • 1/2 tsp salt
  • 1/8 tsp cinnamon
  • 1 cup vegetable stock
  • 28 oz can of diced tomatoes
  • 1/2 cup corn
  • 15 oz can kidney beans
