Tahini Pasta w/ Bok Choy

Happy Memorial Day! I hope everyone is enjoying their summer so far. Ever heard of tahini? No? Well this week I decided to give my hand a try at using this smooth creamy paste and it came out yummy! I actually got the idea because I tried a kind of pastry that was made of tahini and it was surprisingly tasty. So I had my mind on what I could make with tahini and this is the result. Just fyi it’s made from ground sesame seeds.

The ingredients you will need are; penne pasta, bok choy, tahini, soy sauce, red wine vinegar (not shown in photo), sriracha, sesame oil, honey, garlic, ginger, red pepper flakes, water, green onions and lemon juice.

Step one: Bring a pot of water to a boil, DO NOT add salt. Once the water boils add the pasta and cook for about 7 minutes.

Step two: In a blender combine the sauce ingredients; see below at bottom of page. Add water to desired consistency. You want it runny and loose but still a little thick to coat the pasta. You will also adjust the taste to your liking so get into the habit of tasting as you cook! This should only take a few minutes so work quickly. The pasta should NOT be done cooking by the time you’re done with the sauce.

Step three: Separate the bok choy and chop off the stem. Give it a quick rinse in cold water and use your fingers to rid of the dirt.

Step four: When the timer for the pasta approaches 3 minutes, go ahead and place all of the bok choy into the pot. Make the water submerges it so it can cook properly. Then remove the bok choy and drain the pasta.

Step five: Chop the green onions after you give it a quick rinse. Place the pasta back in the pot with the sauce. Mix thoroughly. Add the green onions. At this point I did add just a pinch of salt.

Serve your tahini pasta and arrange the bok choy around it like so. I think it looks so good like this! Personally, for the protein I did cook chicken sausage and it all tasted sooo good together. Highly recommend. Enjoy and leave a comment down below!

Sauce Ingredients:

  • 1/2 cup tahini
  • 1/3 cup soy sauce (plus more to adjust taste)
  • 1 tbsp red wine vinegar
  • 1 tbsp sriracha
  • 2 tbsp sesame oil
  • 2.5 – 3 tbsp honey
  • 1/2 tbsp garlic (minced)
  • 1/2 tbsp ginger paste
  • 1/2 tsp red pepper flakes
  • Water (to desired consistency)
  • Freshly squeezed lemon juice

Pasta Ingredients:

  • 8 oz penne pasta
  • 2 bundles bok choy
  • 2 green onions
