Sheet Pan Tilapia

This week I wanted to make fish, although I usually eat salmon, I wanted to cook a different kind of fish. I decided to go with tilapia, if you’ve never had it, it is definitely worth a try. I like the clean flavor profile, its low in fat and calories but packed with protein so it’s excellent for those looking to lose weight. Here’s how I cooked mine.

The ingredients you will need for this sheet pan tilapia recipe are the following: Tilapia, cherry tomatoes, yellow squash, calabaza, parsley, olive oil, minced garlic and lemon.

Step one: Preheat the oven to 425 degrees F. Prep your veggies, I washed and cut the yellow squash into strips. I like mine chunky. I also removed the seeds and stringy flesh from the calabaza and then it cut into bite sized chunks.

Step two: Wash the cherry tomatoes but leave them whole. Do not cut these! You want then to pop in your mouth when you take a bite.

Step three: Place your veggies in the pan. Drizzle some olive oil and season with salt & pepper. Get your hands in there to distribute the seasonings evenly. Place into oven for 12-14 minutes. The calabaza will take a little longer to cook than the yellow squash so if you need to remove the yellow squash a few minutes before the calabaza is done cooking that’s fine.

Step four: Once the first batch of veggies is done cooking, remove items and place on plate to set aside. Lastly you will place the remaining ingredients in the sheet pan: the cherry tomatoes, the rest of the yellow squash and of course our superstar; tilapia. I seasoned everything with olive oil, salt & pepper. The only ingredient I seasoned with minced garlic and freshly squeezed lemon juice is the fish. You can also add some all purpose seasoning on the fish for added flavor. Bake for 11-13 minutes.
