Chicken with Strawberry Balsamic

Hello my dear readers, I’ve been busy reorganizing my life sorry for the wait. This recipe is a weeknight winner because it only took about 20 minutes to make and the strawberry balsamic is super tasty! I hope you try and enjoy it!

Ingredients: Chicken breasts, basil, scallions, jalapeno pepper, strawberries, olive oil and balsamic vinegar. Oh and of course salt and pepper too you know that already!

Step one: Wash your basil leaves and then stack them together in a pile.

Step two: Roll them up and hold down with one hand. Use the knife with the other hand to cut them into thin strips.

Step three: Wash the scallions and jalapeno pepper before cutting. I also removed some of the seeds in the pepper before dicing.

Step four: Wash the strawberries. Okay.. okay.. we don’t really need this step to be it’s own separate step but I enjoyed taking this photo and I wanted to display it so yes wash those strawberries!

Step five: Dice up the strawberries. You should have about 1.5 – 2 cups of strawberries.

Step six: To make the strawberry balsamic, combine the strawberries, basil, scallions, jalapeno, balsamic glaze, salt & pepper in a medium bowl. Stir gently to avoid crushing the strawberries. Set aside for now.

Step seven: Wash the chicken first and then if you need to butterfly the chicken go ahead and do so. I usually do this when I have two large chicken breasts, I’ll butterfly them all the way through so I have four cutlets. These days the chickies got some big breasts! Season the chicken with salt & pepper on each side. Ok once that’s done, oil the skillet and heat on medium. Cook each side for about 7-8 minutes then set aside on a plate.

The freshness of the basil and strawberries really comes out in this dish. It’s so light, refreshing and definitely juicy! The jalapeno adds a slight kick too. Enjoy!

  • 3 tbsp balsamic glaze
  • 2 tbsp sliced basil
  • 2 tbsp sliced scallions
  • 2 tsp diced jalapeno pepper
  • Salt & pepper
