Easy Turkey Zucchini Bowl

What I LOVE about this easy meal is the colors. I made sure to include lots of colors in my meal to get some of nature’s prescription for good health.

The colors in my meal were green, orange, yellow and some red too! You need all the colors of the rainbow in your nutrition! Don’t let your nutrition fall short of its potential.

To start this recipe the ingredients you need are ground turkey, zucchini, bell pepper, onion, tomato paste, water, garlic, salt, pepper, garlic salt, oregano, paprika, chili powder, basil and olive oil.

Step one: Prep your ingredients. I always like to prep because I have mainly everything ready. Chop the onion, bell pepper and zucchini fairly chunky.

Step two: Heat your skillet on medium. Add the ground turkey to the skillet and crumble it up using a wooden spoon or spatula. Stir occasionally until browned. Add the seasonings listed at the bottom of this post for the ground turkey, this includes the garlic at this point. Cook for about 8 – 10 minutes. Remove cooked turkey and garlic onto a plate and set aside.

Step three: Add some olive oil to the pan. Cook the bell pepper and zucchini in the skillet for about 5 minutes. Stir occasionally.

Step four: Move the cooked veggies to one side of the skillet to make room for the onion. Cook for another 5 minutes and mix everything together. Add the seasonings for the veggies; salt, garlic powder, oregano, basil, paprika and pepper.

Step five: When the veggies are cooked they should look like this, firm and tender. You don’t want them soggy and mushy. We want a nice bite to them. You can add the cooked turkey back to the skillet now then add the water and tomato paste. Give it all a good stir for about a minute or two.

It’s ready to serve. Again it’s important to remember to cook with a variety of colors to get the most out of nutrition. This recipe is excellent for clean eaters who still need that protein, ground turkey is a great choice.

Seasonings for the ground turkey…

  • 1 lb lean ground turkey
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp chili powder
  • 1/2 tsp dried oregano
  • 1/4 tsp paprika
  • 1 tsp garlic (minced)

Seasonings for the veggies…

  • 1 &1/2 tsp olive oil
  • 2 medium zucchini (cubed)
  • 1 bell pepper (orange color) (cubed)
  • 1 small onion (red color) (chopped)
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp paprika
  • 1/4 tsp pepper
  • 1/2 cup water
  • 2 tbsp tomato paste
