Chipotle – Coconut Lime Salmon

This salmon recipe is a delicious winner. I mean it’s just so tasty that it’ll have you craving seconds and left overs!

The color on the sauce is EVERYTHING! *drool* Look at that beautiful spicyyy orange.

You will need the following ingredients: olive oil, scallions, fresh lime, coconut milk, chipotle peppers, soy sauce, dark brown sugar, ginger paste, garlic, salmon fillets, paprika, salt and pepper.

Step One: Turn the stove on to medium heat to prepare the skillet, add a tablespoon of olive oil. Season your salmon on the flesh side with salt, pepper and paprika.

Step two: Place the fish, flesh side down on the hot skillet. let it do it’s thanggg by cooking for 4 minutes each side. Then remove the cooked salmon and set aside on a plate.

Step three: Chop up the garlic, scallions and chipotle peppers. Reduce heat to medium-low and add a tablespoon of olive oil. Add the garlic and ginger paste to skillet. Stir for 1 – 2 minutes.

Step four: Add the coconut milk, soy sauce, lime juice and brown sugar. Reduce the mixture until slightly thicker. After about 2 minutes add the chipotle peppers and cook for about 5 minutes.

Step five: Add the scallions, salt and pepper. Taste to see if flavor needs adjustments. DO NOT add all of the chopped scallions, leave some for garnishing.

Step six: Turn off the heat and afterwards place the salmon back into skillet and baste the salmon with sauce. We do not want to overcook the salmon at this point. The color of chipotle – coconut lime sauce should be a beautiful golden orange! I mean just WOW look at this color!! Serve salmon on a plate of rice, garnish with scallions on top and drizzle the sauce around the plate for finishing touches. Enjoy!

  • 2 tablespoons olive oil
  • 2 Salmon Fillets
  • 1 tablespoon ginger paste
  • 4 garlic cloves (minced)
  • 4 chipotle peppers (minced)
  • 1 can of coconut milk
  • 1 tablespoon fresh lime juice
  • 2 tablespoons dark brown sugar
  • 2 tablespoons soy sauce
  • 2 – 3 scallions (chopped)
  • Paprika
  • Salt & pepper
