
Recently I had picked up a box of pancake mix, you know the traditional Aunt Jemima box. So that’s what I thought I purchased, except I had to do a double take at home when I just felt something was not quite right with the box. To my surprise I saw the iconic image of Aunt Jemima had been removed! *Gasp* Yep, the lady we grew up with as kids, will no longer be a part of the future.
Quaker Oats released a new name for its product, “Pearl Milling Company” has replaced the stereotypical black face “Aunt Jemima” that we all know and love. Just as the new packaging states on the box, “Start Of A New Day”, the company has worked on evolving with the times to remove any traces of racism. However the traditional bright red and yellow colors remain present so the presentation is not all lost. As expected this brought on a domino effect to other racist mascots such as “Uncle Ben’s Rice” from the Mars company.

For this recipe, you will need pancake mix, cranberry sauce, milk, oil, butter and dried cranberries.

Step one: Measure out 1 cup of pancake mix and pour into a large bowl.

Step two: Measure out 1 tablespoon oil and add to the bowl.

Step three: Measure out 1 cup milk and add to bowl.

Step four: Measure out 1/2 cup dried cranberries and add to mix.

Step five: Mix the ingredients in the bowl until well combines, DO NOT over mix. Let the batter stand for 1 – 2 minutes.

Step six: Turn heat on to medium and add a little butter to pan. Pour about 1/3 cup batter to hot pan. Set the timer to 90 seconds for the first side and then flip. Set the timer to another 60-90 seconds for 2nd side.

You want to look for a nice golden ring around the outer edge of the pancake. Now that’s a beautiful color. Keep churning out the pancakes until the batter is finished. This particular recipe should yield about 3 – 4 pancakes depending on size.

To serve, top it off with cranberry sauce and maple syrup. Either, or, or both depending on preference! Enjoy some delicious pancakes this weekend and use up that cranberry sauce, it’s a sure hit. Bon Appetit!
