Thai Red Curry Turkey Meatballs

Today I was in the mood for a thai style dish with some meat. I decided to use thai noodles instead of rice for this recipe and it tasted so delicious!

This is a super tasty dish that I am going to enjoy for a while because I loooove thai food! Especially pad thai, mmm mm so good.

To get started you will need the following ingredients: frozen turkey meatballs, pad thai noodles, chicken broth, coconut milk, ginger paste, cloves of garlic, red curry paste, vegetable oil, green onions, sugar, salt and pepper.

Step one – soak the pad thai noodles in cold water for 30 minutes to soften. I used a little more than two servings so I would end up with left overs.

Step two – Pre-heat your oven to 350 F. Oil the bottom of the baking tray and separate the frozen turkey meatballs two inches apart. Cook in the oven for 20 – 25 minutes or until the meat thermometer reads 165 F.

Step three – Once the timer goes off you can remove the meatballs and place them all on a dish and set them aside.

Step four – Once the noodles are done soaking in cold water drain them. Then you will cook them for 5 minutes in boiling water. Once cooked, again drain and set aside for now.

Step five – On medium heat, in a heavy bottom nonstick pan, heat up the oil. Then add the garlic and ginger paste. Cook for 2 minutes while stirring.

Step six – add the chicken broth and stir till the paste dissolves.

Step seven – add the coconut milk followed by the sugar. Stir for about 2 minutes.

Step eight – add the red curry paste and mix well. You will see a gorgeous color change once combined. Bring to a boil and then turn the heat down to a simmer for 5 minutes.

Step nine – add salt and pepper as needed.

Step ten – add the chopped green onions and cook for 2 – 3 minutes.

Step eleven – now you can add the turkey meatballs and cook a little more for about 5 minutes stirring occasionally. Then slowly you can add your pad thai noodles. Do NOT dump all of the noodles at once. You need to add them in small bundles and stir them in properly so they’re evenly coated with the red curry sauce.

  • 2 servings pad thai noodles
  • 1/2 cup coconut milk
  • 1 cup chicken broth
  • 3 tbsp red curry paste
  • 1 package of frozen turkey meatballs
  • 2 cloves garlic – chopped
  • 3 green onions – chopped
  • 2 teaspoons ginger paste
  • 1 tbsp sugar
  • 3 tbsp oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
