Mushroom Pasta

Oh mushrooms, I am so into mushrooms these days. My taste palate has definitely changed from what it used to dislike. I really enjoy eating mushrooms now. This recipe is for mushroom pasta, I added chicken to my dish but you can opt out if you want.

To begin this recipe, start by gathering your ingredients. You will need the following: mushrooms, parsley, pasta, one onion, parmesan cheese, garlic, olive oil and the three missing items not shown in the image above were the butter, chicken stock and heavy cream. Of course if you decide you want chicken in your dish, don’t forget the chicken!

Step one you will need to chop your onion. I like to cut them fairly chunky. If your mushrooms are not pre-cut, go ahead and slice them thick after you’ve cleaned them. Do not wash your mushrooms, just pat them with a dry paper towel to get rid of some dirt. Heat your cooking pan on low and add the olive oil enough to coat the pan. Once the pan is hot, add the onions.

Add 1 tablespoon of butter once the onion is soft.

Go ahead and add the mushrooms to the pan. Let the mushrooms and onions cook for about 10 – 15 minutes. Make sure you stir occasionally to prevent them from sticking and to cook evenly. Add the minced garlic, about 2 teaspoons, once the mushrooms brown. Sauté until fragrant.

On another burner, bring to boil a pot of water. Once the water is boiling, add salt and then add the pasta. I used the linguini style of pasta, I think that is best for this dish. Cook your pasta as instructed on the box, about 7-8 minutes.

After about 10 minutes, add 1 cup chicken broth to your mushroom and onions pan.

Now its time to chop the parsley like so and add that to your mushroom onion pan. Add salt and pepper to your dish and taste it. You can also sprinkle some dried oregano if you like. You’re going to let this simmer for another 10 minutes.

Add 1/3 cup of heavy cream and 1/3 cup of parmesan cheese to the dish. Give it a good stir and let the cheese melt nicely.

To serve the dish, use a plate and place your pasta directly on first. Then ladle out the mushrooms on top of the pasta. You can always sprinkle a little more cheese and parsley for garnish. This dish is delicious even without chicken but I needed some protein for dinner. There you have it, an easy and tasty mushroom pasta, enjoy!
